BROCCOLI SOUP IN A BLENDER
This is a Family Favorite anytime of the year! Fresh Broccoli is much better, but frozen will work just fine as well. Serve with a Glass of Good Clean Water!
Ingredients:
2 cups fresh broccoli (or 10 oz package frozen)
1/2 cup chopped onions (less if you’re not a fan of onions)
3/4 cup milk
3/4 cup Good Clean Water
1 c. light cream or half & half
2 beef bouillon cubes
Dash ground nutmeg
Dash salt
1/8 tsp. white pepper
Pinch chives
1/2 tsp. basil (crumbled finely)
(optional)
Chives
Sliced almonds
Sour Cream
Parsley
Shredded Cheddar Cheese
Break fresh (or thawed) broccoli in small chunks. Put in blender with 3/4 cup milk. Blend until very fine. Add remaining ingredients except optional stuff.
Sprinkle chives, parsley, sliced almonds, shredded cheddar cheese and/or a spoonful of sour cream on your soup after it’s served in your bowl.
I like to eat this soup at room temperature, but some people like it served cold, so just place the soup in the frig for couple hours. For us northern folks… we also like our soup hot on cold winter days, so pour in a pot and warm it up on low heat for about an hour. Enjoy!
